I was thinking I could leave them blank, put Student as occupation and my university as employer, or I could put Not Applicable.

Just say you are a student at ____ University. Otherwise put N/A. Especially if it is some kind of legal form where you could get in trouble for putting down mis-information-- even if you did it unintentionally.

Your occupation is student, but you do NOT work for the university (you pay them, not the other way around).
