There_s shopping in the snobby-chic Cherry Creek district, or the 16th St. mall. If you don_t mind venturing into the suburbs, there_s Flatirons mall and Park Meadows mall. The newly built Boulder Mall is nice, and since you_re out there you should totally hang out on Pearl St. for a while. Tours of the Celestial Seasonings Tea Factory are fun, and Boulder has a million great trails. Some are paved if you want to take a stroller, but my friends use the baby-back-pack things and go all out while hiking with their kids.
Care to visit the nearby city of Colorado Springs? Garden of the Gods is amazing, and there_s also Manitou Cliff Dwellings out there, Seven Falls, Cave of The Winds (but I_m not sure that last one is stroller accessible.) The Cheyenne Mountain Zoo is cool, that one is smaller than the Denver Zoo, but you get to feed the giraffes out of your hand!
Last but certainly not least there_s the mountains themselves! The elk should be bugling, and the best bet for viewing them is at Rocky Mountain National Park. It_s really an amazing sight to see! The nearby resort-town of Estes Park is fun and my personal favorite restaurant there is _The Other Side_ which is near Rocky_s main entrance.
